I've noticed there are some communities that aren't showing up from other instances, even though we are federated with them. Is this intentional? or just lemmy being lemmy. (specifically I was trying to join some sewing based communities so nothing I think would have been banned from here)

I’m still learning as well but I think If no one from this instance has ever visited that community you need to search for the exact url, then refresh and search again before it will appear. It’s not very intuitive and I hope that will be improved in future versions of Lemmy.

I'm still learning myself, but have found that if the community doesn't show up with just a keyword, then I'll have to enter the full url, "! community@lemmy.instance" and then wait several seconds for it to appear. It seems to be really slow to locate it sometimes.

It's normal in the Fediverse. But this tool helps in finding communities: https://browse.feddit.de/

as @LibertyLizard mentioned, things sometime take a little to propagate between instances (moreso if the two instances haven’t talked to each other yet)

if you’re worried about blocking, you can add on /instances to the end of your home instance’s URL to see which instances are currently linked and currently blocked – ex. slrpnk.net/instances
