White leaves can't photosynthesize so they never last long.

It did it's best. You basically have an albino. If it keeps shooting off all white leaves you need to cut it back. One or two is fine.

I'm just really worried the plant is gonna die before I even get a chance to live :(( It's new and I was hoping I could bring it through the winter. It was the only leaf that started to form between all the four plants that are in the pot.

It's really hard to kill them lol. Just don't let them freeze. There shouldn't be more than 1 in a pot. They are giant plants that grow fast. If you got a white leaf off a regular cheese plant, congrats, you got an expensive and prized mutation! :) Expect the next few to be speckled. They'll survive, the all white ones are brief beauties.
