how well does just flipping the sod over before adding soil work?
(would think kind of a halfway step between just removing all that organic matter versus sheet-mulching)
Grass generally is pretty temperamental. I could see it working but I don't know exactly how effective it would be. You can also solarize the grass with black plastic over it for a few days or weeks.
I don't know the answer to that question. I would be hesitant to try because it sounds like your site would end up raised from the extra material.
