I've never heard of a climbing squash before! So the seeds are inedible? That's what I'm gathering from your description. I never worry about taking seeds out of zucchini.
The seeds are edible, just like zucchini. However, when they get bigger they get more... obvious (crunchy) when you're eating the squash.
