65% hydration, 4.5 hour bulk with 4 folds at 45 min intervals. Shaped and then 15 hours overnight in the fridge before baking, and ready for lunch!

I drive currently, but would much prefer public transport. Unfortunately it isnt an option for me because I start at 4:30AM and buses don't run until 6. It's about a 15 minute drive, would be 25 on the bus (if they started early enough).
