I don't think they are skipping. It gets smoother when I have the saw on it's side.

They looks like mycelium growing in your substrate.
Can you give more detail about your timeline?
Was your coir moist when you transferred?
What is your setup and how much airflow are they getting?
Also, coir has no (or very little) nutritional value.
What method did you use to establish your bed and how did you inoculate?
Is that honey mushroom on the bottom? Is the underside white? White spore print?
