Black Rice Jollof

Ingredients:

• 1 cup black rice

• 1 can diced tomatoes

• 1 red bell pepper, diced

• 1 onion, finely chopped

• 2 cloves garlic, minced

• 1 tbsp tomato paste

• 1 tsp smoked paprika

• 1 tsp thyme

• 1 tsp curry powder

• 1 vegetable bouillon cube

• Salt and pepper to taste

• 2 cups vegetable broth

• 2 tbsp olive oil

Instructions:

1. Rinse the black rice and set aside.

2. Heat olive oil in a pot, then add chopped onions and garlic. Sauté until onions are translucent.

3. Add diced bell pepper and cook for a few minutes.

4. Stir in tomato paste, smoked paprika, thyme, curry powder, salt, and pepper. Cook for another minute.

5. Add the diced tomatoes and vegetable bouillon cube. Cook for about 5 minutes.

6. Add the black rice and stir well. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer until the rice is cooked and the liquid is absorbed (about 45-50 minutes).

Marinated mushrooms with mash potato, quinoa strawberry salad & spicy dill quick-pickles, side of marinated olives. Mash potato has smoked black hot sauce 🤤

 

This crepe is savoury style with 🌱sausage and 🌱cheese, but with lightly cooked Anjou pears and cracked black pepper

 

Been experimenting with crepe styles, this one gets 🌱sausage with 🌱cheese on the inside, side of quinoa strawberry salad, topped with yuzu purée and lemon. I like savoury style crepes with a bit of sweet so this one was pretty nice and probably my favourite of the ones I’ve been playing around with

That’s a good idea, cuz doing it the long slices style with trying to lay out the rice noodles and keep the wrap from tangling all over the place was incredibly frustrating 😅😅😅 Your way sounds much better 🙏🙏

 

This is the best rice imo lol.

 

This is the way I prefer oatmeal, with spiciness and olive oil, marinated olives and a bite of lemon

 
 

Unbelievable pain to make so I don’t do it often, but these salad rolls were pretty great

 

Had to come up with a culinary dish for a class I took so I made a vegan pirukad. Used 🌱sausage with fried onions & garlic and baked in the dough, was excellent tho time consuming but if you spend an afternoon cooking it up and use a bread machine for the dough mixing/rising, it’s pretty worth it.

 

This was a result of a fail of another dish I was trying to make but ended up being fantastically better. Using linguine noodles, peas, red cabbage, yellow peppers & tossed in peanut sauce. Serve cold 😋

 

Lentil salad, it gets brown lentils, diced garden cucumbers, red onions, tomatoes, jalapeño, fresh parsley and mango, spiced with nutmeg. Easy to make and filling and something unique to bring to work potlucks lol It’s always a hit when I bring it
