I'm the same, tried lots of distros but always end up back with Fedora. Running it now on my 3 desktops and 2 Laptops.
But it's not shit for them. It's always works, never down, works fast, and reliably on the computers/laptops/phones etc. Most people could not give a monkies if they are tracking cookies. It's easy to use so they have no reason to move away. Not everyone is a tech nerd who looks for other solutions which are normally more complex. They just want something that works, and that is why gmail/google is popular.
Every single person I know uses gmail here where I live. I'm the local IT guy here in my small village in the UK and I've not come across anyone NOT using gmail

Where did you run you Mastodon Instance. I run mine at Digitial Ocean, been running for nearly a year and have not encountered any issues and I'm running on the cheapest server they have.
If you gave up running a single user instance of Mastodon then I really don't think you should be running a Lemmy instance. It's a fediverse compliant system that will have many of the same issues as Mastodon.
I run a small 10 person Instance of Mastodon and it runs very well on a small server of 4GB Memory and 100GB disk. Not sure why you had issues with a 1 man instance.
Out of interest why would you want to run a 1 man Lemmy Instance?
I chose quit and moves to Mastodon and Lemmy. Been happier ever since.
