Doesn't a root system have a single point of connection in the stem/trunk/whatever?

Depends on the plant. Some plants, like plum or fig trees, have a lot of suckers poking out of the ground and putting up shoots. If they get disconnected from the rest of the roots they keep on growing.

I had a mild obsession with Deluze just out of college, and to this day I do not really know for sure that I understand his work as he intended it.
