Carne Adobada is one of my comfort foods from back home...such a delicious meal.

The easiest recipe I know is just making a quick red chile sauce (I use powdered red chile when outside NM), cube your pork, add the sauce, let marinate overnight, cook in oven, wrap in tortilla, and enjoy! Dirt simple, phenomenal flavor.

I bet it's phenomenal with tortillas. I may need to go get some tonight so we can eat the dish properly! We also want to visit NM so badly. Excellent food there from what I've seen.
