I basically looking for a time that I can set for say 10, 15 or 20 minutes and have it notify me every minute and a half to 2 minutes.

Maybe you want a Pomodoro timer? There should be a bunch of opensource apps for that if you search "Pomodoro" on F-Droid.

I think Break.Down.Timer is the only Pomodoro timer on F-Droid (or atleast the official repo)
