I was looking at the 360° cameras and wanted to buy them. If I don't do something like this, it won't be used much.
Obviously this is kinda the opposite of what you're looking for, but Google relies on third party photographers for the Street View interior views, plus many apartment companies like offering 360° photo views, so there is the opportunity there to go into business taking 360° photos for businesses

The issue I see with this is the data cost of that'll be fucking huge. Would definitely be awesome to have a foss version of Street View.
The project closest to what you describe is Mapillary I guess.
It is owned by Meta so I will pass it.
That's been my biggest gripe, so I don't contribute to it. Realistically, would it even still exist if not for Meta? Probably not.
If an org like Mozilla took control, I would be adding thousands of KM of images to their dataset per year. Easily.

Anyone can contribute on the OSM France instance at https://panoramax.openstreetmap.fr
However, I'm not sure they will accept *videos*.
I already looked in to it, they have guide how to do it.
Basically you set up 360 timelapse and then process it with GPX file or something like that.
As nice as this would be, it seem against the principles of FOSS given you don't ask homeowners for their consent
In the US it’s generally legal to take photos from the public right of way. Google takes care to blur faces and license plate numbers.
As a homeowner, I do not expect to be asked for consent if someone is on my street taking photos.
