That looks like the mountains surrounding Digne les Bains... They culture Salvia Officinalis there but that does not seem to be it. It looks like it belongs to the genus lamiacaea...
The mountains are the foothills of montagne de lure, south of sisteron. Not so sure if you can see those from digne, maybe the lure proper.
I am pretty sure this is the same plant that i saw on plateau valensole, and a google search tells me it would be salvia sclarea.
Anyway thank you all, definitely some salvia.

Looks like a type of sage so that sounds about right
I was going to say, I can smell this picture.
Those sage fields seem to be compagnion fields for the lavender which is also currently flowering. Lavender smell is more intense i think, looks really great with the violet and rose fields.
