Do speed cameras in Sweden only take photos as you approach them (one way only) or can they cover both sides of the road?

I think the face has to be visible in the photo so even if it has the capacity it only takes pictures of oncoming traffic. next time i think r/Asksweddit is a better place for your question :)

This is correct, its because the driver is the one fined. Not the owner of the vehicle.

so if they take a photo of a speeding vehicle in the other lane, the police would just ignore and not try to get in contact with the owner (the rental car company) to ascertain the driver / issue a ticket?

The cameras won't do that in the first place, but if they did such a photo would be useless. In Sweden the owner is not considered responsible for a speeding vehicle, the speed cameras are designed to capture the face of the driver as well as the license plate.
