Dough needs to be in a particular temperature range to rise while not making big bubbles and not end up tasting yeasty.
Higher temperatures also make it tougher for the people working there
I swear I originally replied to some guy saying this was propaganda, but the comment is gone now
I'm in favor of pretty heavy moderation.
