I think this list is a good start. As long as there is a simple enough process to decide on what to add (or remove) it won't matter too much if a few instances are missing for a bit. Better to gradually build up the list of federated instances than to have what happened before.
Hard pass on lemmy.world, I think it should not be considered unless a lot changes with their moderation and userbase. Currently it feels like the worst of Reddit decided to land there and I don't see that changing any time soon. This instance will feel a lot safer to us vegans and we can discuss veganism without them manipulating the discussion with their votes. Also, those libs can't downvote what they can't see :)
