When browsing All it would be great if the app could identify in some way the subs I’m not subscribed to. Given there are now multiple subs with the same name, this would help to identify which ones I am not subbed to when scrolling.

This is a very neat suggestion, and not only for Voyager, I'd like to all the apps to implement this, I mean is easy to lose track since the Federation nature of this site and I'm constantly checking if I'm subbed or not.

Especially since identical name communities can exist on different instances.

If this gets implemented, I hope it’s an option we can turn off because I don’t plan on subscribing to many places so I would hate to have almost 100% of the communities I see be highlighted.

Only the sub name needs to be highlighted, so it shouldn't be that disruptive for others. Having said that, if you don't plan on subscribing to many subs, then you probably wouldn't be browsing All anyway?

The opposite, actually. I pretty much so only browse All because I don’t subscribe to anything.

Instead of highlighting, a different text color may serve the same purpose without being as obtrusive.

Colors aren’t accessible. Some combo of shape + color would be better. An outline around the community name if subbed, or a small check mark icon next to it, for example.
