Improvements are made to graphics

Thats a huge understatement! God rays will be spectacular! With the in-development water reflection shaders and the already implemented bloom shader and shadows it will be very well modernized! I just hope my good old GTX 1080 will be able to output 60 FPS in 2K with ca. 400 nodes render distance.

I wonder if multi colored light will be addressed after 5.9, too.

LOD similar to the Distant Horizons mod for Minecraft would be huge!

There once was farmesh, but according to preserved information/documentation on this it was bad and is incompatible with current rendering. But yes, having consistent and constant 1000+ nodes render distance in all directions would be awesome. Best I was able to configure was around 400 nodes.

Does anyone know how to create the most visually demanding minetest game possible?

Use nodeboxes and 8K textures :D
