For me some of my top ones are /watches, /BikiniBottomTwitter, /me_irl
transgendercirclejerk. It was different from normal trans subreddits because it had a more mature/snappier userbase who poked fun from themselves and everyone else without degrading into racism and toxicity like 4chan
Also antiMLM (could be joined with similar communities like justdependathings, bridezilla, antifundiesnark, LulaNo, etc).

Plex would be another good community. I haven't managed to find a good HomeTheater community yet. PiHole would be good to bring over. AVExchange and WatchExchange.
I already made a place to post and talk about doodle dogs. I was going to do all dogs, but that would be too much to moderate.

There needs to be a comedy podcast aggregate community. Cumtown/The Adam Friedland Show, Matt and Shane's Secret Podcast, YMH, Bad Friends, Rogan, MMP, TFATK (homeless cats only), etc, etc... I'd start one but I'm still trying to figure this out.
