This is a community for people who are working toward a sustainable personal environment. This includes crofters, homesteaders, hobby, small, and family farmers. Hunters, gatherers, cultivators, and keepers are all welcome.

There may be discussions of animal harvesting and processing. This is part of the homesteading reality. If you don't like it leave and block the community.

A comment on another post reminded me...

Eggs. I really like eggs.

This is a picture of a bowl of hard boiled quail eggs with pinch bowls of salt, pepper, and paprika. I set them out at a party. They were a big hit.

We had a breeding trio of turkeys a few years ago so we had turkey eggs. I made turkey egg salad. It was delicious.

We always have ducks and I've eaten duck egg salad as well.

I can't find the picture of the big bowl of goose egg salad. If I do I'll post it.

I love eggs. I eat eggs for breakfast every morning. My big cat loves scrambled eggs and bothers me for some. He doesn't like fried eggs, though.

How does the flavor differ from chicken eggs? My stomach is curious 🤔😁

Eggs taste like eggs.

I don't like duck eggs scrambled. They are a bit...grainy or gritty. They are AWESOME in baking. The albumen is very stretchy so they work great in breads and cakes. My wife makes an awesome pumpkin pie with a lard crust and duck egg custard. I eat it hot from the oven before it's even set. My wife gets very angry.

Goose eggs are sweeter than chicken eggs. Goose egg salad tastes just like chicken egg salad but sweeter. Markedly sweeter. I served a huge bowl of it at a party with fancy crackers allaround and everyone commented that it was delicious but sweet.

Turkey eggs taste just like every other eggs. Turkey egg salad is indistinguishable from chicken egg salad.

Quail eggs taste like little chicken eggs. They're annoying as hell to eat because they're tiny but they're fun.
