Wish there were more wings but the flank steak/briskit looks pretty good, seems like a lot of dry beans though

No idea what to think of the fish, looks dry af but maybe I'm missing something?

You need to replace the white sauce with Santa Maria Salsa (this recipe looks pretty accurate: https://www.seriouseats.com/santa-maria-style-salsa-recipe) served over the steak, and I trust those are Pinquito beans?

Now in the Northeast, but spent years in Santa Maria. I miss oak bbq'd tri-tip.

I like the tangy white sauce better on tri. we always got the salsa for others of they want it!

Crazy, I just finished serving up a big Santa Maria style BBQ and was just coming to post some pictures from it.

its so fun having a big rolling pit full of red oak!

tangy horseradish sauce (horseradish, sour cream, lime juice, course pepper, and tapatío)
