This isn't a mystery, it says in a few historical farming guides that when your livestock get a boxy look, you've done a good job and they are ready for slaughter. Artists take this idea and create an unrealistic ideal. It's no different a phenomenon than giant anime tiddies.
I always thought they were aurochs. Shrug I guess they aren't.
