Are you asking what are microcontrollers in general used for or what this particular microcontroller is used for?

A bit of both. I've seen ESP32 microcontrollers mentioned a few times in the past, but they only tend to have generic descriptions, like 'they can control things', which are not very helpful.

Are these the types of controllers that can take inputs from sensors in plant pots, for example? Do they then forward that information to another system so that you don't have potentially dozens or hundreds of sensors connecting to one device?

Apologies if these are basic questions, the post piqued my interest earlier :)
