It's not much of a hack, though. It's the same logic as adding potatoes to a chicken burrito, or something similar.

You’re ignoring the premise, products with dietary restrictions will over compensate and can be better than the original once you add that missing component back.

If the difference between a chicken burrito and a veggie burrito is “sub potato” then you should find better food trucks.

Yeah, you're right. I think I was just considering my personal experiences, and I've only ever experienced 1:1 substitutions, especially with taco shops and the like
