I don't know much about the potential health benefits, but it is a very cool plant.
I have one growing in my apartment, and one can do some cool chemistry experiments with the turmeric powder! The molecule that makes the powder yellow is called curcumin. You can use it as a yellow dye, a pH sensor, and it has even been used as a component for a low-voltage organic light-emitting diode.
I really want to grow tumeric. Did you just plant some you bought at the store? I’ve done it with ginger in the past with good success.
That does work, but until the shoot comes up you don't have a good way to track the progress. Another way is to place the turmeric in a Ziploc bag surrounded wrapped with a moist paper towel or mixed with a bit of soil, and plant it once you can see the shoot and roots developing. I don't remember what I did, but I think that for my current plant I just placed the turmeric root directly into the soil.
