I love QI and Cats does Countdown. And although it's not exactly a panel show, I'm a big fan of Taskmaster.

Have you managed to find a shred of info about why the latest season of Cats only did one episode then just... stopped? Whenever I try to google it I can't seem to find anything about it

I'm also from Canada (Southern Ontario) and love all those shows as well. Be sure to check out The Unbelievable Truth radio show as well. Currently listening through a second time I enjoyed it so much!
