I'm trying to lean away from big tech these days so I'd rather avoid having a vanilla android phone that's Google focused with lots of bloat ware. Any recommendations on what to consider?

every phone is branded with some sort of bloatware nowadays, doesn't matter which brand/model. The only way you get away from big tech on your phone imo is by using a custom rom.

i've using LineageOS on my oneplus 7t and have been using it on a few different phones in the past 5 years, its a bit buggy on the 7t atm but worked great on other phones ive had. I know GrapheneOS is also recommended (although heard of some recent controversy?) but only works on Google Pixel phones
