I'm confused, I can't access to private subs that I'm following. Is there two level of private subs?

The whole point is that you can't access them.

I thought it mean that only people who are already subscribed can access, read and participate to the sub

They can be set up in multiple ways. One way is that only subscribed people can view. Another way is that only mods can view. Most of the protests were set to mod view only.

Nope you can't access them to discourage people from using Reddit, that's the protest.
