I mean beyond eggplant, every vegetables only pizza I ever had were meh.

Mushrooms was good too with the right kind.

What are your recipes?

This has been my go-to for a bit now for making vegan mozzarella

https://youtu.be/vbNj6luVnCM. Just put a couple nice clumps on the pizza and you're good to go.

I add a bit of lactic acid. It's very close to the miyoko's the vegan mozzarella
