Funny story, when I was the exec. chef for an account at a small-ish university I originally had each station offering a vegan/vegetarian option in the main cafe after a huge renovation, that didn't sit well with the student body so we dedicated one of the 8 stations as exclusively vegan/vegetarian (while maintaining the original veg options available on the other stations).
I regularly sat with individual students to address alternative dietary needs, allergies, etc. Along with the two FOH managers who were absolutely two of the most wholesome people I have ever worked with.
So we sat down with one young gentleman whom I have met with on a couple occasions, he was a grumpy little shit.
Anyway, he absolutely lauded the vegan/vegetarian station-by far the best food in the cafe. "So good, fresh, nutritional, but....but...":
"could you please just put some meat there? Maybe just chicken, but something?'
"okay maybe you're missing the point of having an exclusively vegan/vegetarian station"
"But....they don't have to eat it!"
Round and round for about an hour like this and he just didn't get it.
