If it's not both self hosted and foss, I'd be hesitant. I'd be especially suspicious of free hosting. That said, I do use hosted email (fastmail) though it is on the expensive side.

It's not free. But I don't want self hosted and Foss is more a nice to have than a requirement (for me)
Used it for awhile on and off.
You don't need to use the encrypted sync service. You can have your desktop not sleeping and use the host-clients local sync method to be fully not relying on their external service.
Personally. I was using it with a Debian VM as the always-online host and other machines like phone and laptop, desktop as clients. While also have my own wireguard container running. Pretty much fully offline sync.
I stop using it when I realize they scraped the self-hosted server that they promised.
Also mobile client was ass, just like the promise of self-hosted server.
Ah. I used it for very long time btw. Just stop when I realize the dude scrapped the self-hosted server.
In the mean time. I have been using Notesnook but well, if they fucked up the self-hosted server, I'd leave too

That's funny I already used notesnook and then found this. That said, so you really need your desktop always awake, or will it automatically sync when possible, like syncthing
Why not Joplin? The two standard pages are notes and to do. Sync if you have a Nextcloud space, Dropbox, etc. Encrypt your notes and lists. Open source...
I have used it for years, can really recommend it.
I'm not making a note for each todo. Also Joplin seems to lack any advanced reminder functionality such a recurring reminders. But more generally and importantly and generally there's a dozen notetaking apps that offer various levels of todo functionality, but all the bloat and extraneous functionality that comes with being a notetaking app just gets in the way. I'm only going to use such an app if it removes friction from my life, not adds to it
It fails to include a libre software license text file, like AGPL, so we don't control it, they do. So, how do you ever expect to enforce your privacy when it's their computing, not yours?
I have a bit of a different set of standards than you.
