Signal is a nice suggestion but is based in the US meaning they could be subpoenaed and legally not allowed to say. It's unlikely you'd be targeted though, unless you're a very high-profile person. If you're concerned about where servers are being run and who by then matrix is a great alternative.
vlang might fit your request pretty nicely. It's a bit patchy in places but mainly stable and gets pretty frequent updates
My parents just got a new car with one of those tablets built into the console. They were showing it off to me and turned it on, only for the radio to be blaring and my dad had to go through like 5 menus to get to stop it from playing.

I've not used it much but I'm pretty sure GNOME Boxes can be used as a UI for QEMU, KVM, and libvirt .
There is "The Ship" where all the players (and some of the ai passegers) have a target to kill and are also being hunted.
