Never run a lemmy server but I can't think of anything offhand that would change lemmy configs. Honestly, IDK. You'll likely have to reconfigure your network card but that would take all of 30 seconds.
Just toss your drives into the new machine. Any reconfiguring for the new hardware would be pretty minimal with Mint.
If only there were a way to make it so employees weren't willing to risk their jobs scamming the company to just to earn an extra $100. 🤔
Also, bitlocker is not the only disk encryption software for Windows. It's just the built in one. If you wanted, you could use something like Veracrypt which is open source and will play nicely with all your OSes.
