Why did they use an Xbox Series controller and a PS5 controller, which are both current generation controllers, and then choose to go with a SNES controller rather than a Switch Pro or Joycons

Because they wanted to compare the original SNES controller and the SNES controller for the Switch.

Because the joystick caused the controllers to keep drifting off the table. They decided to go retro after that so they didn't have to deal with joycon drift with absolute surety. CT scans are not cheap to run when you keep having to redo them when the drift happens.
